Peach Cobbler Bars

Continuing the theme of using up all the frozen fruit in my freezer…

My husband brought home about 14 bags of frozen whatevers last spring after a “slushie party” at his school.  So with the first two bags of frozen peaches I tried this recipe: Peach Pie Crumb Bars. It was a whim and an experiment – I needed something fast to bring to MY school for a thank you treat.  They were SO YUMMY that I’ve been really looking forward to making it again.  The only adjustments I made to the original today were to use thawed, frozen peaches (one 32 oz bag, slices) that I cut into bite-sized pieces, brown sugar in the filling, about 2 Tbsps of my whiskey vanilla. AND I substituted 1 cup of the all purpose flour for 1 cup quick-cooking rolled oats to give the crumble a little more texture.  Everything else is exactly the same!

Thawed peaches with all the brown sugar, corn starch, spices, and whiskey vanilla.

Cut the butter into the dry ingredients using a pastry cutter or your fingers.

Add the egg and keep “cutting”. I switched to a wooden spoon about 15 seconds into that process.

Dump half the dry mixture out into the baking pan…

Spread it around, and pat it down evenly for the bottom crust.

Dump out those gorgeous peaches and spread them out evenly. Top the peaches with the rest of the crumbly mixture. and pop in the oven

Bake at 375 for about 40 minutes until it looks like THIS!

Easier to handle when they have cooled a bit, but REALLY YUMMY warm with a little ice cream… mmm.
